Gauchos are the cowboys of South America – a national symbol of pride and tradition. The residents of Rio Grande do Sul, a Brazilian state, are affectionately referred to as “Gauchos”. This state, renowned for its unique churrasco barbecue, is the birthplace of Chef Edmilson Rodrigues. It is there, in Brazil’s top barbecue houses, that Ede learned and perfected his craft.
